Can i create realtime voice chat app with Symphonia ?

[numfin]

If yes, what were should i look at? Right now i have some practice with gstreamer, but i found this library and now im thinking if i can use it for the task.
Task is: get audio from cpal -> encode packet with symphonia -> send over network -> decode packet with symphonia -> play with cpal
